Heart of Palm salad is a fresh easy recipe that can be used as a topping, in a sandwich, as a spread on a spoon…you decide.
Ingredients
1 14 ounces can heart of palm, drained well diced
1/4 cup green onions, diced
1/4 cup yellow pepper, diced
1/4 cup radish, diced
Sauce:
1/4 cup vegan mayo
1/2-1 teaspoon sriracha
1/2 lemon, juiced
salt and pepper to taste
Instructions
Dice up all the fresh vegetables, place them into a medium-size bowl. Now add the dressing ingredients along with the vegetables. Mix until well blended. Salt and pepper to taste. Add fresh herbs and spices as desired. Chill for an hour or overnight.
