Students at Canisius College can now dine on vegan burgers, cupcakes, mac and cheese, and more.

Canisius College in Buffalo, NY has introduced its first-ever vegetarian dining station in campus cafeterias. Dubbed €œPitchforks€€”complete with signage that reads €œEat More Plants€€”the station serves the Canisius student body of more than 4,000 with options such as sweet potato-bean patties with avocado and beet hummus, tempeh Reuben, macaroni and cheese, and a line of all-vegan cupcakes. The student body has reportedly responded very well to the new offerings. €œThe Pitchforks eatery has been a big hit with our graduate students, most of whom prefer vegetarian or vegan fare,€ says Paul Waldau, professor and Director of Anthrozoology Graduate Program. €œThis development is part of a wonderful trend to responsible eating€”measured by something other than human health alone.€
