NFL Network Host Erin Coscarellis Coleslaw

2 cups finely shredded green cabbage
1 cup finely shredded red cabbage
1/2 cup finely shredded carrots
1/2 cup diced onions
1 cup vegan mayonnaise
2 Tbsp. vegan sour cream or hummus
1 Tbsp. white vinegar
1 Tbsp. sugar
2 Tbsp. mustard

  • In a large bowl, combine the cabbage, carrots, and onions.
  • Whisk the remaining ingredients together in a small bowl, then add to the vegetables. Mix together well.
  • Chill in the refrigerator for 1 hour before serving.
