Vegan and gluten free wrap made with collard greens, veggies and sunflower hummus. This sunflower wrap is full of healthy flavors!
You might be thinking, whats a sunflower wrap? Well, (I think) I just made that up. €œCollard greens wrap€ just didnt have the same ring to it. Since this was inspired by the vegan meal I had at Lunas Living Kitchen (they call it a €œWest Coast Wrap€) that is made with a sunflower hummus, I thought why not just embrace the uniqueness of the hummus and call it a sunflower wrap! Now I just wish I had an actual sunflower sitting on the table in the pictures.
My gif-making skills might need some work but this one basically shows you whats in it. Collard green, red cabbage (not pictured), sunflower hummus, sprouts, cucumber, tomato and avocado. So much healthy.
Before you ask €“ sure, you can make this with a different kind of hummus if you dont want to make the sunflower hummus. But then you cant call it a sunflower wrap, and wheres the fun in that?
This is a naturally vegan and gluten free meal, but is packed with so much flavor that you wont even realize it. This is coming from the queen of bread (me), so if I love a sandwich made out of a collard green, you will too.
Serve with hot sauce. Or more hummus. And please, tell me if you make this!
- Collard greens
- Red cabbage
- Sunflower hummus (or other hummus)
- Layer ingredients in the following order: Collard green, red cabbage, hummus, sprout, tomato, cucumber, avocado.
- Wrap tightly.
- Serve immediately with hot sauce or more hummus.
