In a new feature highlighting vegan cheese on the Today Shows website, chef and restaurateur Chloe Coscarelli shares three of her favorite dairy-free recipes. While plant-based cheeses are rarely described as €œcreamy€ and €œluscious,€ says writer Emi Boscamp, Coscarellis spin changes the conversation. In the feature, the by CHLOE restaurant co-founder provides tips and recipes for three nut-based cheeses including cashew cheese sauce, almond-based Parmesan-style topping, and a ricotta-like tofu cheese Coscarelli favors for pasta and pizza. A frequent guest on the popular morning show, Coscarelli most recently shared some of her pasta recipes with host Matt Lauer.
